Method to Use the Eyedropper Tool While Editing a Gradient:
- Select the Gradient color filled Shape: First, select the shape with the gradient applied to it.
- Activate the Text Tool: Press T to switch to the Text Tool & Type
- Select Selection tool : Click to selection on the Text Layer and switch to eyedropper tool.
- Switch to the Eyedropper Tool: dual click the eyedropper tool and option panel open then check mark on Appearance option.
- Ok next to procceed.
- Sample the Color: Click on any color selected gradient shape and fill in text.

Important Tips:
- If you need more control over the sampled color, you can use the Color Picker after using the Eyedropper Tool to fine-tune the color.
